Whisked egg whites and very little flour make them wonderfully light, and the ground almonds make them really moist. Serve with custard, vanilla ice cream or cream. The fruit can be played around with, depending on the season. Raspberries and peaches can be used in the early summer months, for example. These can be snacked on as they are, at room temperature, or else served with a green tahini sauce and some extra herbs.
These fritters are a bit of a fridge raid, using up whatever herbs you have around. As long as you keep the total net weight the same and use a mixture of herbs, this will still work wonderfully. The batter will keep, uncooked, for 1 day in the fridge. Alternatively, pile the fritters into pitta bread with condiments: a combination of yoghurt, chilli sauce, pickled vegetables and tahini works well. This is a quick way to get a very comforting meal on the table in a wonderfully short amount of time.

Karinto is a traditional Japanese snack. Normally we use flour and yeast before deep-frying and coating with brown sugar.
Then I remembered I used to eat fish bone snacks when I was a kid. So I started making them in my restaurant to give to people as a snack. They loved them. This mackerel spine karinto is coated with cane sugar and sesame seeds. Daikon is said to be good for a tired stomach after all the feasting over Christmas. This makes for a lovely winter starter. This is something different to do with leftover turkey, with the clean and nourishing flavours of shredded cucumber, shredded leek and udon noodles.
This dish is served cold. This is a popular dish in Japan done with eel, which we call unagi kabayaki don, but eel is very pricey and hard to get. Why not use Irish herring instead? It is one of my favourite fish — it's not pricey and it's so good for you. We serve this as a main with Japanese rice which is different to sushi rice.
